About Us

Hi, I’m Casey Shimfessel — husband to Makinsey, dad to Everett (with one more on the way) and the heart behind Neighbor Coffee Co. I also serve as a student pastor at First Baptist Tomball, where I spend my days investing in the next generation! That same passion for people is what drives my love for coffee and the joy I find in creating spaces where others can connect.

My love for coffee runs deeper than just the perfect cup. I’ve always believed coffee has a unique way of bringing people together. My long-term dream is to one day open a brick & mortar café that serves as a true “third space” — a place where people can belong, connect, and find community over a great cup of coffee.

For now, our mobile cart is the beginning of that vision. Whether at weddings, schools, churches, or community events, I get to do what I love: serve people, create meaningful moments, and share good coffee with my neighbors.
